Cloud Bread Pizza

Handy snack or light starter
Serves: 3
Carbohydrate content: 4.5g per serving


  • 3 medium eggs
  • 2 tbsp cream cheese
  • 1/4 tsp cream of tartar
  • pinch of salt
  • 6 tbsp sundried tomato paste
  • 100g cheese of your choice, grated


  1. Preheat oven to 150°C
  2. Separate egg white and yolk into 2 metal or ceramic bowls. Be very careful not to get any yolk in with the egg white.
  3. Add cream of tartar to the egg white and whip until the mixture until stiff.
  4. Add cream cheese to egg yolk and whip until smooth.
  5. Gently mix egg white into the cream yolk mixture taking care not to deflate the whites.
  6. Grease a baking tray and spoon the mixture into 6
  7. Cook in the oven for 10-15 minutes until golden
  8. Top each bun with 1 tbsp of sundried tomato paste and grated cheese. You can also add some mixed herbs of your choice.
  9. Place under the grill until cheese is bubbling then serve.

Why not try experimenting with toppings. Add some bacon or tuna for a filling snack or starter.
