Cheese Stuffed Courgette

A great tasting side dish which adds a bit of luxury to your evening meal.
Serves 1
Carbohydrate content; 4.2g per serving
  • 200g courgette, cut in half and deseeded
  • 40g feta/stilton
  • 1 tbsp olive oil
  • salt and pepper
  1. Boil the courgette for about 1 minute and drain well.
  2. Fill the courgette halves with the cheese of your choice, place under the grill until the cheese starts to melt and turn golden.
  3. Drizzle with the olive oil, season and serve.
