Fancy Seafood Soup

A hearty seafood soup with a lot of bite.
Serves: 2
Carbohydrate content: 8.3g of carbs per serving (16.6g for the whole dish)
  • 4 large scallops or 8 small scallops
  • 200g crab meat
  • 200g white fish
  • 2 shallots, chopped
  • 1 tbsp olive oil
  • 100g tomatoes, tinned
  • 200ml white wine
  • 300ml water
  • 2 garlic cloves
  • 2 bay leaves
  • 1 thyme sprig
  • salt & pepper
  1. In a pan gently fry the shallots, garlic, bay leaves and thyme until the shallots and garlic are starting to take on a colour.
  2. Add the tomatoes, white wine, water and season lightly. Leave to simmer for 15 minutes for the flavours of the herbs to infuse.
  3. Remove the bay leaves and thyme and either blitz the soup to a smooth consistency or use a potato masher to get it as smooth as possible.
  4. Add in the crab meat, stir well and simmer for 5 minutes.
  5. Add the fish and scallops and simmer for a further 5-10 minutes.
  6. Season if needed and serve.
